HERBY WHITE BEANS

This is the perfect light lunch/early dinner. One of my go-tos for Meatless Monday’s too!

1 can white beans

1 can veggie broth (or stock)

TONS of herbs- thyme, rosemary, parsley

Fresh minced garlic

Generous squeeze of a lemon

Finishing touches:

1 poached egg

Feta cheese crumbles

Chives

Red pepper flakes

Sourdough bread

Heat olive oil in a small sauce pan with garlic until soft. Add beans, herbs, season with salt and pepper, and cook for 2-3 minutes. Add vegetable broth and lemon juice and simmer for about 10 minutes. In the meantime, poach 1 egg and chop green onions. Scoop your brothy beans into a bowl and garnish with the poached egg, chives, Feta cheese, and red pepper flakes. Worth serving with a piece of sourdough bread!
